Ingredients
- 1/3 cup Sunsweet prunes
- 2 eggs
- 3 tbsp butter, softened
- 3 tbsp plain brick-style cream cheese
- 3 tbsp coconut flour
- 1 tsp instant coffee granules
- 1 tsp baking powder
- Shredded coconut
Instructions
Preheat oven to 350°F. In blender, purée prunes with 2 tbsp water.
Using electric mixer, beat eggs, butter and cream cheese until smooth. Mix together prune purée, coconut flour, instant coffee granules and baking powder; stir into egg mixture. Let stand for 10 minutes.
Using wet hands, form into 12 balls. Roll balls in shredded coconut until well coated. Bake on parchment paper–lined baking sheet for 15 to 20 minutes or until golden brown.
