Ingredients

Wet

  • 1 1/2 cup gluten free 1-to-1 baking flour
  • 1/4 cup coconut sugar
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • Pinch sea salt

 

Dry

  • 3/4 cup Sunsweet Amaz!n Diced Prunes
  • 3/4 cup Sunsweet Amaz!n Prune Juice
  • 1/2 cup pumpkin puree
  • 2 eggs or flax eggs
  • 1 tsp of fresh squeezed lemon juice

Instructions

Preheat the oven to 350°F.

 

Whisk together dry ingredients in a medium bowl. Whisk together all wet ingredients in a large bowl. Add the dry mix to the wet mix and stir until well combined. Pour into a batter into a greased loaf pan and bake for 50 minutes to 1 hour. Let sit 15 minutes before removing from pan and slicing.

 

Makes 8 servings.
