Ingredients
Wet
- 1 1/2 cup gluten free 1-to-1 baking flour
- 1/4 cup coconut sugar
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- Pinch sea salt
Dry
- 3/4 cup Sunsweet Amaz!n Diced Prunes
- 3/4 cup Sunsweet Amaz!n Prune Juice
- 1/2 cup pumpkin puree
- 2 eggs or flax eggs
- 1 tsp of fresh squeezed lemon juice
Instructions
Preheat the oven to 350°F.
Whisk together dry ingredients in a medium bowl. Whisk together all wet ingredients in a large bowl. Add the dry mix to the wet mix and stir until well combined. Pour into a batter into a greased loaf pan and bake for 50 minutes to 1 hour. Let sit 15 minutes before removing from pan and slicing.
Makes 8 servings.
