Ingredients
- Prune Puree
- 1 cup Sunsweet® Amaz!n™ Prunes
- 2/3 cup water
- Cookie Bites
- 2/3 cup coconut flour
- Pinch of salt (optional)
- 1 cup prune purée
- Vanilla extract (optional)
Instructions
To make your prune puree, add 1 cup of prunes and 2/3 cup water to a food processor or blender. Blend until smooth and free of chunks. Add vanilla and salt to mixture. Add coconut flour a little bit at a time, blending as you go, until you have a thick dough. You may need to scrape down the sides of your food processor.
Once mixture dough is formed and free of chunks, portion with a cookie scoop and roll into balls with your hands. Enjoy immediately, or refrigerate for up to 1 week!
