Ingredients
- Prune Puree:
- 12 Sunsweet® Pitted Prunes, chopped
- 1/3 cup Sunsweet® Amaz!n™ Prune Juice
- Muffins:
- 3 eggs
- 1 1/4 cups milk
- 1 tsp vanilla extract
- 1 cup oat bran
- 1 cup ground almonds
- 1 tsp baking powder
- 1/4 tsp salt
- 12 Sunsweet® Pitted Prunes, chopped
Instructions
Prune Puree: In a food processor or blender, blend prunes with prune juice until mixture is smooth.
Muffins: Stir oat bran, ground almonds, baking powder and salt together in a large mixing bowl.
In separate bowl, whisk together eggs, milk and vanilla. Stir wet ingredients into dry ingredients. Stir in reserved prune puree. Fold in chopped prunes. Spoon batter evenly among muffin cups.
Bake 18 to 20 minutes or until a skewer inserted into the center of a muffin comes out clean. Let cool.
