Ingredients
Cake
- 1 1/2 cups sugar
- 1 cup butter, softened
- 4 eggs
- 2 1/4 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 3/4 cup buttermilk
- 1 1/4 cup Sunsweet® Pitted Amaz!n™ Prunes, chopped
Cream Cheese Frosting
- 16 oz cream cheese, softened
- 2/3 cup butter, softened
- 2 tsp vanilla extract
- 2 1/2 - 3 cups powdered sugar
Instructions
Cake: Preheat oven to 350F and butter two 8" round baking pans. Cream sugar and butter in a large bowl with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each. Stir together flour, baking powder and salt in a medium bowl. Add to butter mixture alternately with buttermilk. Stir in prunes and spread equal amounts into each pan. Bake for 45 minutes, until a toothpick inserted into the center comes out clean. Let cool in pans; carefully remove. Spread frosting between layers, and on the top and sides of cake.
Frosting: Beat together cream cheese, butter and vanilla extract in a medium bowl until light and fluffy. Gradually beat in powdered sugar until smooth.
Tip // For evenly level layers wrap dampened cake strips around the pans before baking.
