The great thing about broccoli rabe is that all of it can be eaten, from the stem to the leaves and everything in between. We recommend this sauteed broccoli rabe recipe as a side dish for your favorite protein or even a cauliflower steak for our plant-based chefs. Since it's so simple to make, you'll want to make this as your other dishes are cooking and serve immediately while it's hot.

Ingredients

  • 2 TBSP olive oil
  • 2 bunches of broccoli rabe
  • 2 cloves garlic, thinly sliced
  • 1 TBSP white wine vinegar
  • 1 cup Sunsweet® Amaz!n™ Prunes, thinly sliced
  • Salt and pepper to taste
  • ½ cup slivered almonds

Instructions

In a large, deep pan or Dutch oven, heat the olive oil over medium high heat. Sauté the broccoli rabe until it starts to wilt and soften, about 3 minutes.
 
Add the garlic, reduce the heat to medium and continue to sauté until the garlic softens, but doesn’t brown, about 2 more minutes. Add the white wine vinegar and prunes and sauté 3 more minutes. 
 
Season with salt and pepper, sprinkle with slivered almonds and serve immediately.
