Ramen Burger with Prune Mayonnaise

Ramen and burgers are incredibly popular, so why not combine the best of both worlds? Our prune ramen burger is a perfect example of fusion cuisine!

Ingredients

1 pkg (8 oz/250 g) ramen/egg noodles

2 eggs, divided

1 tsp salt, divided

1 tsp ground black pepper, divided

1 1/2 cups Sunsweet Amaz!n Prunes, chopped and divided

1/2 cup light mayonnaise

1 tbsp tomato paste

1 tsp smoked paprika

1 lb lean ground beef

2 tbsp soy sauce

¼ cup olive oil, divided

1 cup packed spinach leaves

2 tomatoes, sliced

1 avocado, halved, pitted, peeled and sliced

1 tbsp lime juice

4 to 6 round molds (4 inches)

Directions

Cook ramen/egg noodles according to package instructions. Drain and rinse noodles with cold water. Transfer to bowl and stir in 1 egg, ½ tsp salt and ½ tsp pepper. Divide into 12 portions.

 

In blender or food processor, blend ½ cup prunes, mayonnaise, tomato paste and paprika until smooth.

 

In medium bowl, stir together beef, remaining egg, ½ cup prunes, soy sauce, remaining salt and remaining pepper. Divide and shape into 6 patties.

 

In large skillet set over medium heat, heat 1 tbsp oil. Lightly grease molds with cooking spray and arrange in skillet. Add noodle mixture to each of the molds and cook, flipping halfway through, for 5 to 8 minutes or until golden on each side. Transfer to parchment paper–lined baking sheet. Repeat with remaining noodles mixture and more cooking spray as needed.

 

In the same skillet, heat 1 tbsp oil and cook burger patties, flipping halfway through, for 6 to 8 minutes or until seared and fully cooked and instant-read thermometer registers 165F in thickest part of patty. Transfer each burger to 1 noodle “bun.” Top each burger with spinach, tomato, avocado, a drizzle of lime juice and remaining chopped prunes. Cap burgers with remaining “buns.”
