Ingredients

  • Salad
  • 2 cups water
  • 1 cup quinoa
  • 1 cup halved red grapes
  • 1/2 cup Sunsweet® Amaz!n™ Diced Prunes
  • 1/2 cup each: thinly sliced celery, green onions and chopped toasted walnuts
  • Dressing
  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp honey
  • 1/2 tsp salt, or to taste
  • 1 clove garlic, minced
  • freshly ground pepper to taste

Instructions

Rinse quinoa in a fine mesh strainer; drain well. Bring water and quinoa to a boil in a medium saucepan; reduce heat and simmer, covered, for 12 minutes. Let stand for 10 minutes, then fluff with a fork and let cool. Place in a large bowl with remaining salad ingredients. Whisk together all dressing ingredients and pour over salad; toss well to coat. Cover and chill for at least 1 hour.

Tip
Salad may be made 1 day ahead of serving. Add walnuts just before serving.
