Need to fuel up on breakfast but don't have a lot of time to prepare? Our recipe for prune and oatmeal to-go cups is perfect for a quick bite as you head out the door. Or, you can enjoy these healthy snacks in the afternoon for a little pick-me-up!

Ingredients

  • 1 cup non-dairy milk
  • 1/4 cup 100% real maple syrup
  • 1 Tbsp lemon juice
  • 2 eggs or vegan egg substitutes
  • 1/3 cup Sunsweet Amaz!n Diced Prunes, plus additional for garnish
  • 1 cup rolled oats
  • 1 cup oat flour (rolled oats ground in a high-speed blender)
  • 1 tsp baking soda
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon, plus additional for garnish
  • 1/4 tsp sea salt

Instructions

Preheat oven to 350°F.

Whisk together non-dairy milk, maple syrup, lemon juice and eggs in a large bowl. Stir in Sunsweet Amaz!n Diced Prunes.

Add the rolled oats, oat flour, baking soda, ginger, cinnamon and salt; stir together until well mixed.

Scoop equal amounts into 12 non-stick muffin cups and add a few diced prunes and a dash of cinnamon to the top of each. Bake for 25 minutes, then let cool before serving.
