Ingredients

Slider

  • 3/4 cup cannellini beans, rinsed & drained
  • 1/2 cup cooked brown rice
  • 1/3 cup Sunsweet® Pitted Amaz!n™ Prunes, chopped
  • 1/4 cup walnuts, coarsely chopped
  • 1/4 cup cashews
  • 1/4 cup almonds, silvered
  • 1/4 cup panko breadcrumbs
  • 1/3 cup onion, chopped
  • 3/4 tsp garlic salt
  • 1 egg
  • Olive oil
  • Mini burger buns & lettuce leaves
  • 1 red onion, quarted and thinly slice

Prune Ketchup (Optional)

  • 1/2 cup ketchup
  • 1/2 cup Sunsweet® Amaz!n™ Prune Juice
  • 6 Sunsweet® Amaz!n™ Prunes

Instructions

Place rice, prunes, nuts, breadcrumbs, beans, onion, garlic salt and egg in a food processor. Pulse on and off until all ingredients are finely chopped, being careful not to overmix. Shape into 1 1/2" patties and brish both sides with oil. Cook in a large skillet over medium heat for 5 minutes on each side, until lightly browned.

Prune Ketchup (optional): Puree ketchup, juice and prunes in a small blender or food processor until smooth.

Serve on toasted buns with lettuce, onion and Prune Ketchup or kethcup.
