Ingredients

  • Fruit Salad:
  • 4 Sunsweet® Pitted Prunes
  • 4 dried figs
  • 4 dried apricots
  • 2 tbsp dried cranberries
  • 3/4 cup Sunsweet® Amaz!n™ Prune Juice
  • 1 tsp finely grated orange zest
  • 1/4 cup fresh orange juice
  • 1 tbsp chopped walnuts
  • Cream Cheese Dressing:
  • 1/4 cup light cream cheese, softened
  • 1 tsp finely grated orange zest
  • 1/4 cup fresh orange juice
  • 8 walnut halves, finely chopped (approx.)
  • 2 tbsp milk (approx.)

Instructions

Fruit Salad: In deep dish, place prunes, figs, dried apricots and cranberries. Pour prune juice, orange zest, orange juice overtop; stir well. Cover and let stand until plump, about 4 hours. 

Cream Cheese Dressing: In bowl, beat cream cheese with orange zest and orange juice until smooth. Stir in milk, 1 tbsp at a time, or until dressing is a pourable consistency. Stir in walnuts and set aside.   

Drain fruit and divide between two bowls. Drizzle with some soaking liquid and dollop with Cream Cheese Dressing. Garnish with additional walnuts.

Tip: Dressing keeps well in fridge, covered, for several days. Simply stir well before serving, adding a tablespoon of milk to loosen if needed.
