Ingredients

  • 1 and 1/2 cups all-purpose flour or whole wheat flour
  • 1 cup wheat bran or high fiber cereal, processed in the food processor into crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg, at room temperature
  • 1/3 cup pure maple syrup
  • 1/3 cup low-fat milk
  • 1/3 cup melted coconut oil (or other mild oil)
  • 1 teaspoon pure vanilla extract
  • 1 7.5 oz can Sunsweet Prune Juice
  • Optional: few mini chocolate chips on top

Instructions

Preheat the oven to 400°F. Spray a mini muffin pan with nonstick spray or use muffin liners.

 

Whisk the flour, wheat bran or cereal, baking powder, baking soda, salt, and cinnamon together in a large bowl until combined.

 

Mix in the egg, maple syrup, milk, melted coconut oil, vanilla extract, and prune juice until combined.

 

Spoon the batter evenly into liners, filling them nearly to the top. If desired, sprinkle a few mini chocolate chips on top.

 

Bake for 10 minutes until a toothpick inserted in the center comes out clean.

 

Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling. Enjoy!
