Ingredients

  • Dip
  • 1 cup roasted red pepper
  • 1 1/4 cup sour cream
  • 1 tbsp paprika
  • 1 tbsp red chili flakes
  • Salt
  • Meatballs
  • 3/4 lb each ground beef and pork
  • 1 onion, finely chopped
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tsp fresh thyme leaves
  • Salt and pepper
  • 8 Sunsweet prunes
  • 2 tbsp sesame seeds
  • 1/4 cup olive oil

Instructions

Dip: In food processor, blend together red pepper, sour cream, paprika and chili flakes until smooth; season with salt. Refrigerate until ready to use.

Meatballs: Mix together ground beef and pork, onion, eggs, Parmesan and thyme. Season with salt and pepper; mix until combined. Divide into 8 portions and roll into meatballs. Stuff 1 prune inside each meatball, ensuring prune is fully enclosed in meatball.

Place sesame seeds in shallow dish. Roll meatballs in sesame seeds until coated. Shake excess sesame seeds from meatballs.

Heat oil in large skillet set over medium heat; cook meatballs for 10 to 12 minutes or until cooked through and golden brown all over.

Transfer to paper towel–lined plate. Serve with dip.

Tip: Substitute ground turkey or chicken for ground beef and/or pork if desired.
