Ingredients

  • 1/2 cup Sunsweet® Pitted Dates
  • 3 tablespoons pure maple syrup
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon pumpkin pie spice
  • 1 1/2 cups gluten free rolled (old fashioned) oats
  • 3/4 cup pecans
  • 1/3 cup hemp hearts
  • 1/4 cup ground flax seeds
  • 1/4 teaspoon sea salt
  • 1/2 cup Sunsweet® Chopped Dates

Instructions

Preheat oven to 275°F and line a baking sheet with parchment paper. Place pitted dates in a small bowl and fill with water warm, let soak for 15 minutes. Transfer soaked dates and ⅓ cup of the soaking liquid to a high-speed blender with maple syrup, coconut oil and pumpkin pie spice; blend until smooth. Stir together oats, pecans, hemp hearts, ground flax and sea salt in a large bowl. Add the blended date mixture and stir until well mixed. Spread about a ½-inch thick on prepared baking sheet. Bake for one hour, stirring every 15 minutes.

Remove from oven and stir in chopped dates; let cool completely. Store in an airtight container. Makes 10 servings.
