Frozen Prune & Cherry Yogurt Parfait Recipe

Ingredients

1/4 cup granulated sugar

3 cups fresh or frozen sweet cherries, halved, pitted and coarsely diced

1 cup Sunsweet Amaz!n Prunes, divided

1 can (10 oz/300 mL) sweetened condensed milk

1 1/4 cups plain Greek yogurt

1 2/3 cups heavy or whipping cream

2 cups crumbled meringue puffs, divided

Directions

In medium saucepan, bring sugar and 1 tbsp water to a boil and cook, undisturbed for 7 to 10 minutes or until golden brown. Add cherries, cover and simmer over medium heat, stirring occasionally, for 5 minutes or until cherries are soft. Transfer to blender or purée using immersion blender until smooth. Let cool.

 

Meanwhile, cut half the prunes into small cubes.

 

In medium bowl, stir together condensed milk and yogurt.

 

In another medium bowl, using electric mixer, whip cream until stiff peaks form. Fold in yogurt mixture and cubed prunes.

 

Line two 9 x 5-inch loaf pans with plastic wrap. Pour one-quarter yogurt mixture into each pan and spread to even layer. Pour 1/4 cup cherry sauce and 1/4 cup of meringue puffs on top over each. Repeat the layers, finishing with the yogurt mixture. Freeze overnight. Chill remaining cherry sauce.

 

Pull plastic wrap to dislodge frozen parfait. Turn out onto a plate and remove plastic. Drizzle remaining cherry sauce on parfait and decorate with remaining meringue puffs and remaining prunes. Serve immediately.
