Ingredients
- 2 cups 2% milk
- 1 cup 10% cream
- 1 can coconut cream
- 1 cup basmati rice
- 1/2 cup Sunsweet prunes, chopped
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground turmeric
- 1 tsp ground cardamom
- 1/4 cup chopped pistachios
Instructions
This creamy rice with cardamom, turmeric, cinnamon and coriander has no added sugar. A subtle sweetness comes only from the prunes.
Preparation:
1. In saucepan, bring milk and cream to boil; stir in rice. Cook, stirring constantly without a lid, for 20 to 25 minutes or until very tender. Let cool completely.
2. Stir in coconut cream, prunes, cardamom, turmeric, cinnamon and coriander. Sprinkle with pistachios.
