Double Chocolate Amaz!n™ Cookies
We’re doing chocolate chip cookies one better: we doubled the chocolate and added marshmallows, prunes, and almonds. And there’s an optional bonus: you can pre-soak the prunes in a splash brandy for extra depth and complexity.

Ingredients
- 1 cup Sunsweet® Amaz!n™ Diced Prunes
- 1 3/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 cup white chocolate chips or chunks
- 1/2 cup mini marshmallows
- Cooking spray
- 3 Tbsp brandy (optional)
- 1 cup semi-sweet chocolate chips
- 1/2 cup butter, room temperature
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 egg, large
- 1 1/2 tsp almond extract
- 3/4 tsp vanilla extract
Instructions
Preheat oven to 325°F.
Soak Amaz!n Prunes™ in brandy for 5 minutes if desired; strain and set aside. Melt semi-sweet chocolate chips in microwave or in a bowl set over boiling water. Cool for 5 minutes.
With an electric mixer, beat butter and sugars in a large bowl until light and well mixed. Add egg, almond and vanilla extracts; mix until smooth. Beat melted chocolate into butter mixture until incorporated.
In a separate bowl sift together flour, baking soda and salt and stir into chocolate mixture. Stir in white chocolate chips, marshmallows and Amaz!n Prunes™. Spray 2 baking sheets with cooking spray or line with parchment paper. Drop cookie dough in large spoonfuls onto baking sheets, leaving 2 inches between each cookie.
Bake for 12 minutes or until tops of cookies feel slightly firm when touched. Let cookies cool on baking sheets for 10 minutes. With a spatula, carefully transfer cookies to a wire rack and cool completely.
