Spiced Prune and Date Bread

Makes one 8 x 4 inch loaf

Ingredients

3/4 cup oats

3/4 cup flour

3/4 cup whole wheat flour

2/3 cup brown sugar

2 tsp baking powder

1 tsp cinnamon

1 tsp ginger

3/4 tsp salt

1/2 tsp cloves

1/2 tsp nutmeg

3/4 cup chopped Sunsweet® Pitted Dates

3/4 cup chopped Sunsweet® Amaz!n Prunes

1/2 cup chopped pecans, walnuts, or a combination

1 1/4 cups plain yogurt

2 eggs, large

1/4 cup butter, unsalted, melted

Instructions

Preheat oven to 375°F and grease an 8 x 4 inch loaf pan.

 

Mix oats, flours, sugar, baking powder, cinnamon, ginger, salt, cloves, and nutmeg. In another bowl, mix dates, prunes, and nuts. In a third bowl, mix yogurt, eggs, and butter. Add flour mixture to yogurt mixture. Add 3/4 fruit mixture.

 

Spoon batter into prepared pan. Top with remaining fruit mixture. Bake 30 minutes. Loosely cover with foil and bake until a tester comes out clean, 35 to 40 minutes. Cool in the pan 10 minutes, then transfer to a wire rack to cool completely.
