Pancetta Plum Focaccia

  • 3 oz diced pancetta
  • 1/2 red onion, thinly sliced
  • 1 (14-16 oz) ball pizza dough
  • 1/2 cup Sunsweet® Amaz!n™ Diced Prunes
  • 2 oz fresh mozzarella cheese
  • 2 Tbsp chopped fresh rosemary
  • aged balsamic vinegar

Preheat oven to 450°F. Sauté pancetta and onion in a medium skillet over medium-high heat for 10 minutes, stirring frequently; set aside. Knead Amaz!ns™ into pizza dough then roll or stretch into a 9x12 inch oval, and place onto a large baking sheet. Top with pancetta mixture, then tear cheese into small 1/4 inch pieces and scatter over pancetta. Bake for 15 to 20 minutes or until crust is golden brown. Sprinkle with rosemary and serve warm drizzled with balsamic vinegar.
