Oatmeal Yogurt Breakfast Popsicle 

These cool, creamy oatmeal yogurt breakfast popsicles are the perfect way to start any day! Layers of cooked oatmeal, muddled berries, and Greek yogurt or yogurt of choice—frozen into a delicious breakfast on a stick. Learn how to make yogurt popsicles with oatmeal and fresh berries for an easy freezer meal prep breakfast.

Ingredients

½ cup old fashioned oats, (or quick-cooking oats)

 

1 cup prune juice

 

1 cup fresh or frozen berries

 

½ cup plain Greek yogurt, or yogurt of choice

 

1-2 Tbsp maple syrup, to taste

Instructions

- Add juice to a saucepan and bring to a boil.
- Add oats and turn down the heat. Cook until tender and integrated—about 10 minutes for old fashioned, or about 2 minutes for quick cooking. (Feel free to cook oats and liquid in the microwave if desired).
- Muddle berries and mix into oatmeal mixture.
- Separately, combine yogurt and maple syrup, to taste.
- Fill each popsicle mold with 2-3 spoonfuls of oatmeal mixture, followed by a layer of yogurt, and alternate until all popsicle molds are filled.
- Add popsicle sticks and freeze 4-6 hours or overnight.
- Remove desired popsicles from mold and enjoy! (use a warm towel on the outside of the mold to help release each popsicle.)
- Yields ~8 oatmeal breakfast popsicles (depending on size of mold).
