Spring Salad with Prunes and Lemon Vinaigrette

Toasted Lemon Vinaigrette Dressing (see below)

1/2 cup walnut pieces thinly sliced

8 cups of salad green quartered

1 small golden delicious apple shredded

1 medium carrot

6 oz. Sunsweet Pitted Prunes


Place prunes and remaining salad ingredients in bowl. Drizzle dressing over salad and mix gently to combine.

Lemon Vinaigrette Dressing: In small jar, combine cup lemon juice, 3 tbsp. olive oil, 2 tbsp. chopped fresh basil or 2 tsp. dried, 1 tbsp. honey, tsp. grated lemon peel, tsp. salt and tsp. freshly ground pepper. Makes 8 servings.
