2 teaspoons poppy seeds
1/2 teaspoon salt
1 tablespoon vegetable oil
4 teaspoons honey
2 tablespoons cider vinegar
3 tablespoons red onion, chopped
Poppy Seed Dressing (optional)
1/3 cup walnut pieces, toasted*
1/2 cup thinly sliced red onion
1/2 red apple, coarsely chopped (Gala or Jonathan, if available)
1 cup SUNSWEET Lemon Essence Pitted Prunes, cut into halves
1 small head romaine lettuce, cored, washed and chopped
In large bowl, combine salad ingredients. In blender container, combine all dressing ingredients except poppy seeds. Cover and blend until smooth. Stir in poppy seeds. Serve dressing on the side or pour over salad; toss well. Serve immediately. Makes 6 servings.
*To toast walnuts in microwave, place on glass pie plate. Microwave on HIGH (100%) 3 minutes, stirring halfway through.
