Grilled Yam and Dried Plum Salad

2 lbs yams, peeled and sliced 1/4 inch thick

1 tbsp extra virgin olive oil

3 cups lightly packed baby arugula

1/2 cup Sunsweet® Plum Amazins

1/2 cup chopped pecans, toasted

1/2 cup quartered and thinly sliced red onion


1/4 cup extra virgin olive oil

3 tbsp white balsamic vinegar

1 tbsp pure maple syrup

1/2 tsp salt

Freshly ground pepper to taste


Toss yams with oil in a large bowl; grill over medium-high heat for about 10 minutes or until yams are lightly charred on the outside and soft inside, turning occasionally. Let cool slightly. Whisk together all dressing ingredients in a large bowl. Add yams and toss well to coat. Add arugula, Plum Amazins, onion and pecans; toss again lightly. Serve immediately. Makes 6 servings.
