1 lb carrots, peeled and sliced 1/2 inch thick on the diagonal
2/3 cup pineapple juice
1/4 cup diced pineapple
1/4 tsp cinnamon
1/3 cup Sunsweet® Plum Amazins™
1 1/2 tbsp honey
1 tbsp butter
Bring carrots, juice, pineapple and cinnamon to a boil in a small saucepan. Reduce heat and simmer, covered, for 5 minutes. Stir in remaining ingredients and increase heat slightly. Cook, uncovered for 5 to 7 minutes more, or until excess liquid has cooked off and carrots are crisp-tender, stirring frequently. Makes 4 to 6 servings.
