Curried Spinach Salad

1/4 cup extra virgin olive oil

3 tbsp rice vinegar (not seasoned)

2 tsp sugar

1 1/2 tsp curry powder

1/4 tsp each: salt and dry mustard

Pinch cayenne pepper

1 clove garlic, minced


12 cups (9 oz) fresh spinach leaves

1 cup sesame sticks

1/2 cup Sunsweet® Plum Amazins

1/2 cup each: diced red bell pepper and thinly sliced and quartered red onion


Whisk together all dressing ingredients in a large bowl. Add remaining ingredients and toss well. Serve immediately. Makes 6 servings.
