2 cups old fashioned oats
1 cup almond butter
1/2 cup honey
1 tsp cinnamon
1/2 cup brown sugar
1/4 tsp salt
1/4 tsp ground cardamom
1 cup Sunsweet dried cherries, chopped
1 cup Sunsweet Mediterranean Apricots, chopped
1 cup raw almonds
Preheat oven to 325 degrees. In a large bowl, combine all ingredients except for the cherries, apricots and almonds and mix together thoroughly. Spread out the cluster mixture on a sheet pan covered with parchment and sprayed with cooking spray. Pinch or roll together clusters the size of large peas until it is mostly clusters.
Bake for 30 minutes, shaking the pan a couple of times during cooking so the clusters get golden and crispy. Cool and mix with the fruit and almonds.
