High Fiber Prune & Oat Bread

Ingredients

1 1/2 cups (about 9 oz.) chopped, pitted prunes

1 cup rolled oats.

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup butter or margarine

1 cup boiling water

2 eggs

3/4 cup brown sugar, packed

1 cup all-purpose flour

1/4 cup whole wheat flour

Instructions

1. Preheat oven to 350 degrees F.
2. Combine prunes, oats, soda, salt and butter in bowl.
3. Add boiling water, stir. Set aside.
4. In mixer bowl, beat eggs and sugar until well blended.
5. Add flours; mix. Bater will be stiff.
6. Add prune mixture; beat until well blended.
7. Pour into greased 8 1/2 x 4 1/2 x 3-inch loaf pan.
8. Bake 1 hr. or until pick inserted into center comes out clean.

Cool in pan 10 minutes. Remove to rack.

Makes 1 large loaf - 10 slices.
