Here’s a great summer salad recipe we can’t get enough of lately:
3 navel oranges, peeled, halved, sliced
5 oz sweet baby lettuce blend (about 4 cups)
8 oz Sunsweet Plum Amazins (about 1 1/2 cups)
4 green onions, cleaned and sliced (including some green tops)
1/4 cup olive oil
2 Tbsp white wine vinegar
1/4 tsp salt
1/4 tsp crushed red pepper flakes
1 cup chopped fresh cilantro, parsley or basil
In large serving bowl place oranges, lettuce blend, Plum Amazins and onion. Whisk together oil, vinegar, salt and pepper in small bowl; drizzle over orange mixture and toss gently. Add herbs and toss again before serving. Makes 6 to 8 servings.
